This coffee undergoes a seven day mosto fermentation in airtight tanks. The containers sit shaded under false banana trees, creating a natural cool room for fermentation. Cherries are then dried in direct sunlight for two days to avoid mold before another 30 days drying under shade. This is And Coffee’s first lot using this method, resulting in a vibrant cup with notes of mango, rose wine, and baking spice.
