
Fayel Abdosh purchased the Adorsi washing station in 2018, bringing in cherries from over 800 local farmers each year. As soon as coffees arrive, floaters are separated. The remaining cherries are depulped and fermented for 24 hours in temperature-controlled water from the Wogida river. After fermentation, coffees are spread in a single layer on raised beds to dry for 15 days, constantly turned to prevent mold. This careful processing results in a sweet and pleasant cup profile of citrus, marmalade, and milk chocolate.
